Person-in-charge removed traps from facility at time of inspection. Discussed approved means of pest control with PIC and working with facility's pest control applicator to utilize approved methods. Corrected at time of inspection.

Observed pre-cooked sausages in walk-in cooler without proper date marking. PIC advised that sausages were moved from freezer to cooler to thaw 2 days prior and product was being held until needed for reheating and hot holding. PIC added proper date marking at time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods were properly date marked at the time of inspection. Corrective Action: Corrected at time of inspection.
