Inspector's notes
-- In reach-in drawer, observed metal container of sloppy joe ground beef with internal temperature ranging from 85°F-87°F. An employee stated the sloppy joe was cooked almost two hours prior to the inspection (cooked around 10 am, inspection started around 11:45 am). At the time of inspection, the person in charge separated the sloppy joe in smaller portions and submerged the pan in an ice water bath to rapidly cool to 70°F within the 2 hour timeframe. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
