Observed peeling coating on the wire shelves in the prep tables. The disintegrating coating could pose a physical contamination risk if it falls into foods below. All foods were covered, and no contamination was observed during the inspection. Proper repair of the wire shelves is required. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. Corrective Action: Correct prior to next routine inspection.

Observed various cheeses (47-51°F), salsas (47°F), cheese pesto (49°F) and garlic and oil (49°F) in a prep table above 41°F. The top of the unit had been filled 1 hour prior, and all foods were moved to alternative refrigeration. Some of the bins of cheese that were placed in the bottom of the unit within the last 2 hours were moved to alternative refrigeration. All Time Temperature Control for Safety (TCS) foods in the unit for more than 4 hours were discarded. Discussed the importance of cold holding with the manager. Provided cold holding guidance. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. - - - - - - Observed in-use sanitizing compartment of 3-comp sink filled with 0ppm solution of quaternary ammonium. Concentration was measured with inspector's and establishment test strips. When sanitizing food contact surfaces with quaternary ammonium, solutions should measure between 150-400ppm. Upon further review, it was found that the sanitizer bottle was almost empty. Manager instructed employees to drain the sanitizing sink and replace the santizier supply.
