High temperature dishwasher in kitchen that has been retrofitted to use chemical sanitization measured a chlorine concentration <50ppm. Dishwasher was run and tested multiple times with no change in concentration. Establishment will temporarily sanitize equipment at 3-compartment sink manually until dishwasher is able to read a chlorine concentration of 50-100ppm. In walk-in cooler, several quart containers of salsa roja had a date mark of 5/31. In reach-in cooler on cook line quart containers of cooked collard greens had a date mark of 6/2 and containers of stew had a date mark of 5/28. Person in charge confirmed that all dates of items were correct. As food was past the 7 day use period it was embargoed. TCS ready to eat foods stored more than 24 hours shall be date marked and used or discarded within 7 days (day made+6). Corrective Action: Corrected at time of inspection.
