Main walk-in cooler had the following TCS food measuring an internal temperature of 46-48'F: enchilada sauce, heavy whipping cream, ham, and feta cheese. Per person in charge temperature of cooler had not been verified within past four hours. As it was unable to be determined how long food had been out of temperature it was embargoed. Ambient air temperature of cooler measured 47.8'F with min/max thermometer. Establishment has another adjacent walk-in cooler that was holding temperature to stored TCS foods temporarily. TCS foods shall be held at 41'F or lower when cold holding. Corrective Action: Corrected at time of inspection.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Per PIC, foods had been in unit for approximately for 30 minutes. Predefined Comment: All TCS foods improperly hot held were removed from unit to be reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection. Do not use unit to house TCS foods for hot holding until unit can maintain foods at 135*F or above.
