Inspector's notes

In walk-in cooler a large pan of lamb shanks cooked the previous day measured an internal temperature of 54'F. As lamb had not cooled to 41'F within proper time frame it was embargoed. Chef removed lamb from cooler to discard. Reviewed cooling procedures with chef. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.
