Turkey deli meat with 6/2 prep date and 6/13 discard date in the walk in cooler. PIC discarded the turkey-see embargo form. Teriyaki broccoli item without date mark in the walk in cooler. Employee stated that the product was made Friday of last week and provided a date mark. Ham item with a illegible prep date mark in the walk in cooler. Employee stated that that ham was prepped two days prior and that the date was removed to indicate todays date because the kitchen staff was nervous about the original date. The employee provided the proper date mark. PHF/TCS food should be clearly marked to indicate the date the food shall be consumed or discarded when held at a temperature of 41°F or less for a maximum of 7 days. PIC stated that all items had been in the unit for an extended amount of time and discarded-see embargo form. Keep PHF/TCS in cold holding at 41F or below. *Ambient temperature of the reach in cooler/cooler drawer unit in the cookline area was 50F. PIC found that the unit was accidentally unplugged/turned off. PIC removed all food items from the unit and stated that the unit would not be used until it is maintaining 41F or below.
