Employee stated that all items were placed into the unit about three hours and forty minutes prior and relocated to the walk in freezer to rapidly cool. (*Items had cooled between 2-5 degrees after 10 minutes.) Keep PHF/TCS foods in cold holding at 41F or below. *Ambient temperature of the cooler drawer unit was 59F.
