Spoke with operator on site about redoing the menu and eliminating all raw animal products and advanced preparation processes. Menu will be reduced and all proteins will be precooked product and modified for service. Operator understands that if there will be any cooling or reheating processes or proteins cooked from raw that a remodel will be required to install the equipment necessary for those practices.

This establishment is not participating in the award program at this time and had 0 Priority, 2 Priority Foundation violations on this inspection.This facility has expanded their menu and now is operating outside the scope of their current Class 2 E&D permit. The establishment is cooking chicken, beef, and pork from raw as well as cooling and reheating food items – there is no dedicated prep sink or ventilation hood present to accommodate these changes. The establishment must either discontinue advanced prep of foods including cooking of raw foods, and cooling/reheating, or submit remodel plans to MCESD within 5 days which will include adding necessary equipment to accommodate menu/process changes.
