Inspector's notes
Observed various cheeses (48-51°F), dairy-based sauces (49-50°F), sliced and diced tomatoes (50°F), cold holding in the prep table across from the grill. The prep unit was verified to be working by a min/max thermometer. Thermometers calibrated with staff. Temperature Control for Safety (TCS) foods were immediately actively chilled with ice. Staff stated they had a large rush and had the prep table open. Prep tables are to be maintained as closed unless in active use. Time Temperature Control for Safety (TCS) foods are to be managed in the prep table to retain their temperatures at or below 41°F. Discussed routinely checking cold holding temperatures. Corrective Action: Corrected at time of inspection.

Observed a large metal bowl of flour sitting directly in front of the handwashing sink basin near the pizza-making station. PIC relocated all items blocking handwash sink at time of inspection. Discussed maintaining soap, paper towels, and a trash basin near ALL the handwashing sinks. Handwashing sinks to be ALWAYS maintained unobstructed and accessible. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed a dumpster used by the establishment without a cover attached, and alerted the manager who plans to contact their garbage servicer to replace the dumpster with one with an attached cover. Also, observed the grease trap was opened and had excessive black matter build-up on the sides around the opening. The manager closed the lid of the grease trap at the time of inspection and plans to wash the grease trap before the next inspection. Corrective Action: Correct prior to next routine inspection.

A copper water line for the chemical dispenser in the mop sink area has been routed to inside the mop sink basin from the nearby hose bib. This water line must be properly installed out of and away from the mop sink basin. PRIORITY VIOLATION-5-205.15 (A), P: System Maintained in Good Repair; According to Law: 1. There are flex drain pipes from the new ice machines that extend down into the floor sink that they drain into. Provide hard pipe drain lines (such as PVC) for these drain pies that empty into the floor sink with minimum 1 in. air-gaps between the ends of the pipes and the flood rim of the floor sink. All other drain pipes from the ice machine and from the walk-in refrigerator must also have minimum 1 in. air-gaps. 2. The water lines from the soda fountain system are leaking onto the floor in the kitchen. Repair all water leaks. The drain hub assembly beneath the middle compartment of the three compartment sink is deteriorated and covered in silicone caulk and a substance that looks lice epoxy.
