Observed the maximum temperature of the hot water sanitizing dish machine to have a maximum temperature of 152F, measured with a calibrated min/max thermometer. Water temperatures must be at a minimum of 160F on the surface of the wares to properly sanitize. Discussed completing daily checks checks with a min/max thermometer of the temperature dots to ensure the water is at the proper temperature. The PIC placed the machine out of service and called for repair at the time of this inspection. Correct By: Corrected At Time Of Inspection
