Inspector's notes

At time of inspection, observed food employee cleaning a knife by washing and rinsing equipment then dipping the utensil for 3 seconds in a quat ammonium solution before wiping the utensil with a towel to dry. Instructed food employee that all food contact surfaces must be washed, rinsed and when using quat ammonium as a sanitizer, that the equipment and utensils must be in contact with the quat ammonium for 1 minute before putting away to air dry. Had employee re-wash, rinse and sanitizer utensil at time of inspection. When using a quat ammonium, the dishes must have a contact time with the solution for 1 minute. Corrective Action: Corrected at time of inspection.

Observed imitation crab mix and crab legs stored in the second prep cooler without a date mark. Per food employee, the food items were pulled and open yesterday. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed food employee try and demonstrate the calibration of the pH meter and verification of the pH of the acidified rice, but had some problems with the with the pH which was showing 4.2 for the rice. Tried multiple times another pH meter but could not get the meter to calibrate correctly. Checked sushi logs for today, and it showed a pH of 4.0, but it was discovered that the food employee was using the same pitcher used to pour in the vinegar into the rice. Explained to food employee, that the container used could be giving a false reading due to the extra vinegar left in the container. All procedures in approved variance/HACCP plan must be conformed to at all times. Sushi establishment will be using time as a public health control today for the sushi rice. Sushi rice was time stamped at time of inspection. Corrective Action: Corrected at time of inspection.

Observed ROP fish (tuna and salmon) thawing in the bottom portion of the the prep cooler. All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. All ROP fish was removed from ROP packaging at time of inspection. Corrective Action: Corrected at time of inspection.
