Observed hash at 45*F and sausage patties at 46*Fin small sandwich prep cooler next to grill. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All temperature control for safety foods were moved to other equipment to rapidly cool. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed small sandwich prep cooler next to grill with an ambient temperature at 45-47*F. Cold hold units must be held at a temperature that keeps temperature control for safety foods at 41*F. Person in charge adjusted thermostat in unit to drop ambient temperature. After 15 minutes ambient temperature remained at 45*F Temperature control for safety foods were moved to other cold hold equipment. Corrective Action: Correct prior to re-inspection.
