Observed red tomato salsa, green tomato salsa, cream cheese spread, and cooked goat meat in reach-in cooler at 50 °F. Except during preparation, cooking, cooling or when time is used as a control all time/temperature control for safety (TCS) foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Person in charge (PIC) stated that TCS foods were placed in cooler more than a day prior. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

The person in charge stated the raw meats had been placed in the reach in cooler less than 1 hour ago and moved them to the reach in freezer for rapid cooling. The person in charge stated the cooked beans and cooked salsas had been in the reach in cooler since yesterday, more than 4 hours. The beans and salsas were embargoed at the time of inspection.
