Observed dog bites (mini hot dogs in pretzel) with internal temperature of 117*F in the hot case. Person in charge indicated they were prepared 20 minutes prior to inspection. Person in charge reheated the dog bites to 165*F. Discussed increasing the temperature of the hot case (the measured ambient temperature of the case was 135.5*F) to maintain time/temperature controlled for safety (TCS) foods at 135*F and above or putting TCS foods on a time as a public health control policy and tracking the time/discarding the TCS foods in the hot case every 4 hours. Time as a public health control guidance emailed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Observed soft top (made with buttermilk) with internal temperature of 45*F in the refrigerator under the hot case. The measured ambient temperature of the refrigerator was 44.8*F using a min/max thermometer. Person in charge indicated the soft top had been in the unit for 3 hours and moved it to a functioning refrigerator to cool back down to 41*F and below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
