Observed establishment brewing cold brew at room temperature at time of inspection. Per PIC, after the 24 hour brew, the cold brew is moved to the reach in cooler and date marked. Unless under a variance/HACCP, cold brew can not be brewed at room temperature. Inform PIC, that if the establishment wishes to continue brewing cold brew that it will be brewed, dispensed, and held at 41F or below. PIC moved large pitchers of the cold brew to the reach-in cooler to continue brewing. PIC reached out to management on what the establishment is going to do going move. A variance/HACCP must be obtained prior to conducting any specialized processes. At time of inspection, observed Y-valve or side kick attached to mop sink faucet that has an AVB; one side was connected to a hose that was hanging in the mop sink. Explained to PIC that the AVB valve is not designed to be continuously under pressure and that there shouldn't be any obstructions downstream from the AVB valve. This could result in the backflow prevention device to fail. PIC removed shut-off downstream from atmospheric vacuum breaker at time of inspection. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Equipment inspection.Construction is about 90% complete.Walked site with ToddAddress the following items: (1) Provide an additional RPZ backflow assembly on the hot water line for the blender rinse sink.(2) Adjust the service windows so that they are self-closing from the fully open position (3) Paint the exposed bare wood over the mop sink/water heater platform.(4) Provide a means to hang the mop at the mop sink to dry.(5) Provide an updated water quality report showing the business name and address, and well as water sample location.(6) Install a ceiling tile over the water heater.(7) Remove cooper/brass between the RO backflow and the system.Please continue with construction according to plans, stipulation letter, and inspections.
