Upon re-inspection, establishment was able to replace the compressor of the walk-in refrigerator and restore cooling capacities. Refrigerator was observed to be holding at <41*F. No County legal action will result from this inspection.Inspection report was e-mailed. Walk-in unit was out of temperature. As a result, discussed with district manager on site that all TCS foods in the walk-in is to be embargoed and use of the walk-in is to be ceased until repairs are done to ensure capacity to maintain temperatures below 41*F. Discussed with manager that no deliveries shall be received and placed in the walk-in and that the establishment may continue to operate only with the food in the front prep-line and front-end reach in cooler. Discussed that district manager is to send any relevant copies of submitted work orders to supervisor and to contact the supervisor when the repairs are completed. A re-inspection is scheduled within 24 hours to verify the repair.

Observed sliced deli meats, tuna, milk, meatballs, sliced tomatoes, sliced lettuce, and sliced cheeses with an internal ambient temperature of 49-57*F holding in walk-in refrigerator. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. District manager and staff embargoed all TCS foods. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed walk-in reading 60*F on equipment thermostat. Ambient air was measured to be at 58*F via min-max thermometer. District manager arrived on site to verify. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection. **Re-Inspection required** Re-inspection scheduled within 24 hours on 8/8/25. Please repair walk-in refrigerator prior to re-inspection. Establishment was notified to not accept any deliveries or store any additional TCS food in the walk-in until it is repaired and verified. Establishment was notified that food service may continue only with food in the prep line and front of store reach in cooler until stock runs out.
