A Facilities inspection was conducted. >>>Discussed with Person in Charge (PIC) items labeled 'Keep Refrigerated' shall have a date mark of the day it was opened + 6 days to hold for a total of 7 days before discarding. >>>Observed an unlabeled jar of a bright blue powder and a bright yellow powder on the seasoning shelf. Per PIC they are natural food dyes used when a class is taught in the kitchen. Discussed with PIC Any substance(s) added to food must be GRAS (Generally Recognized as Safe) and/or used consistent with all legal requirements. The permit holder is responsible for ensuring that their menu items comply. Education was provided on the addition of food additives and dietary supplements during the inspection. PRIORITY VIOLATION-5-202.13, P: Backflow Prevention, Air Gap__ Noted the drainpipes of the 3-comp sink and the ice machine are inside the floor sink. Drainpipes from equipment or ware washing sink must be indirectly discharge to the sewer. Use metal brackets to brace drainpipes along the walls. Slope to drain at 1/4" per foot and indirectly discharge to the floor sink with 1" air gap from the flood rim of the floor sink. Correct By: Correct Prior To Reinspection
