Observed a tub of cream cheese, cheddar cheese, and parmesan cheese spread mix, which had been made on the 19th (see embargo). Alerted manager and re-educated on date marking requirements. Opened TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment Observed freezer with condensate build up on the ceilings and large ice crystals hanging from the cooling unit. Some ice from the cooling unit has dripped onto the cardboard boxes containing hermetically sealed meats below. No direct contamination was observed. Alerted management and discussed protecting equipment from large temperature fluctuations. Repair may be required. Manager plans to place sheet pans beneath the cooling unit to collect water condensate and protect the foods below. Discussed proper equipment adjustment and protection of foods with management.
