Inspector's notes

-- In reach-in refrigerator, mozzarella string cheese, hot dogs, and cream cheese had internal temperatures ranging from 48°F-53°F. The PIC unsure how long items have been in refrigerator. All TCS foods improperly cold held were discarded by PIC at time of inspection. The reach-in refrigerator door was kept partially open, which caused the TCS foods to increase in temperature. Verified with min/max thermometer the refrigerator was able to cool to an ambient temperature below 41°F. Discussed ensuring employees are tightly closing refrigerator doors. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
