Inspector's notes

Observed liquid eggs from raw cracked eggs holding 61F and another container holding 51F. Cook stated that the eggs were prepared at 5 or 6am. Discussed rapid cooling or utilizing ice baths for food items that will be prepared at the start of the work-day. Products may need to be prepared the previous day to ensure temperature requirements are met. TCS foods starting at 41F or below or ambient air temperatures must cool down to 41F within 4 hours of being prepared. PIC discarded the liquid eggs. Also observed shredded beef/veggie mixture in the bottom portion of the prep table holding 46F. Staff moved the product to the walk-in refrigerator for rapid cooling. Corrective Action: Corrected at time of inspection.
