Inspector's notes

Observed opened package of mozzarella cheese (mozarella sticks) with no date marked. PIC was not sure when it was opened. Observed small containers of in house sweet glaze (cream cheese base) in reach in behind counter. No date marking observed at time of inspection. PIC mentioned they were made 2 weeks prior. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Advised PIC that RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
