Inspector's notes
Observed in the cooling unit across from the meat market display 6 packages of hermetically sealed filet mignon from 5 days prior, sealed in-house with a non-commercial sealer (Food Saver machine). The facility does not have a variance to complete this preservation process. A variance/HACCP must be obtained prior to conducting any specialized processes. Variance/HACCP applications are available through the customer portal "Permit Center" at https://maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home. Additional resources can be found at https://www.maricopa.gov/3978/Food-Variances. Corrective Action: Corrected at time of inspection by PIC using another approved method to store the filet mignon. Apply for a variance to conduct reduced oxygen packaging (ROP).
