Observed deli cheeses, deli meats, sliced tomatoes, and chopped lettuce in cold holding unit with an internal temperature ranging 47-54*F. Person in charge stated foods were prepared within 3 hours of inspection and is actively cooling. Foods should be cooled in refrigeration equipped for cooling. Person in charge removed items and placed in walk-in for quick cooling. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Diced ham, liquid egg, and french toast mix, found in cooler below cook-line countertop with internal temperatures of 56-59*F. The ambient temperature of the cooler was also noted to be about 59*F. PIC stated the cooler was last known to be 41*F at about 6:00 AM today. PIC discarded above mentioned items. Please ensure cold held TCS food items are maintianed at 41*F or below. The cooler will not be used until it is able to maintain an ambien temperature of 41*F or below. Work order was called in for the cooler. Corrective Action: Corrected at time of inspection.
