Inspector's notes
Observed frosted cupcakes/72F labeled "perishable, keep frozen" being kept at room temperature. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per PIC, the cupcakes were out of temperature less than four hours. The cupcakes improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection.

In refrigerators, observed RTE/TCS held beyond their discard dates including turkey breast/9-22, Albacore tuna salad/9-20, Mediterranean salad/9-20, roasted chicken wings/9-20, and turkey rollups/9-22. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Discussed verifying actual datemarking policies from the sources of the donated foods and freezing foods that are still withing approved time frame. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection.

Observed expansion of distribution area containing pre-packaged, non-TCS food. PIC indicated that additional remodeling is planned to remove walls, add refrigerators, and expand the storage of pre-packaged TCS food.
