Inspector's notes

Observed bartender grab lemon with tongs, then grab lemon with bare hand to place it on the rim of a glass at time of inspection. Ready-to-eat (RTE) food that was contacted by bare hands was discarded by PIC at time of inspection. Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with the person-in-charge (PIC). Bare hand contact is not approved with ready-to-eat (RTE) food items. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed mac and cheese, cut lettuce, portioned chicken, sliced and diced tomatoes, sliced ham and turkey, and shredded cheese in the prep table with temperatures between 44 to 56*F at time of inspection. Per chef, all items except for the mac and cheese, cut lettuce, and portioned chicken were placed into the prep table less than 2 hours prior to inspection. The mac and cheese, cut lettuce, and portioned chicken were voluntarily discarded at time of inspection. Observed ambient temperature of the prep cooler at 50*F at time of inspection. Person in charge (PIC) state they would discontinue use of the cooler until it is able to keep TCS food items below 41*F or below. Establishment has multiple working prep tables, reach-in coolers/freezers, and walk-in cooler/freezer capable of keeping TCS food items at 41*F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
