Per PIC, the cooked beef was placed there more than 4 hours prior to inspection and was embargoed at time of inspection. Observed cooked shrimp with temperatures between 56 to 60*F in the prep table at time of inspection. Per PIC, shrimp was cooked an hour prior to inspection and was moved to the walk-in cooler to rapid cool at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Repeat violation: 2nd consecutive. Observed cooked beef in prep table on top of containers at 60 degrees. Per PIC, they were cooking beef and put it in there to start cooling. Discussed keeping it on the bottom for more efficient cooling. Also observed garlic in oil mixture on the sauce cart. Garlic in oil must be kept at 41 degrees Fahreheit or below. Per PIC, it is usually in the cooler and they take it out during peak service times. Had PIC put container on ice to keep cool while out. Garlic had been out 2 hours prior to inspection.
