Refrigeration units used to house TCS foods for cold holding must be able to hold foods internally at 41*F or below. New permit inspection walk through with the director of operations. This is an inspection for a new owner of an existing bakery.This permit will be changed to an eating and drinking permit, This location does not wholesale and sells coffee on site.This establishment is not participating in the award program at this time and had 2 Priority, 1 Priority Foundation violations on this inspection.This establishment/operation has been evaluated and qualifies for the issuance of the permit. To complete the permitting process, meaning issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Note that fees paid up to this inspection approval did not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Payment with a credit/debit card can be made on-line via select “Pay a Fee” at esd.maricopa.gov. Please note that if you select payment via online, the annual operating permit fee invoice may take up to 7 business days to post online. Checks and money orders are also accepted via US Mail. Core-4-101.17, C: Wood, Use Limitation: Please finish out the following: 1). Paint the wood in the shelving in the back room and make sure there is no exposed wood. 2). Please seal the pressed wood edges of the shelving over the bakery table, both. 3). At he front counter, finish untreated wood except for the pony wall cap and paint the side of the wood across from the hand sink as that paint is a flat. Use a washable paint. 4). On of the ceiling tiles has holes in it, please see if it can be replaced. Often contractors leave extra tiles somewhere above the ceiling. 5). Please fill in with caulk and finish out any holes in the walls. Core C: §4-205.10 Non-commercial fridge used for storing TCS Foods like milk and other items used for the coffee. PRIORITY VIOLATION-5-202.13, P: Backflow Prevention. Establishment has an RO system, proofer and espresso machine. Please provide the following backflow valves: 1). A Reduced Pressure Zone backflow valve upstream of the RO system. Install with a hub drain and lead drain to the floor sink. Valve will require testing and certification after installation. 2). Provide a dual check valve that meets plumbing standard ASSE 1022 upstream of the espresso machine. 3). Noted uncapped sewer line under the three compartment sink. Please cap this line off. Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained. Please re-caul the three compartment sink and provide a beveled away from the wall bead of caulk.
