Observed raw shell eggs stored above ready-to-eat (RTE) foods such as chopped green onions, sliced ginger and lettuce cups inside of the walk-in cooler. Discussed with person in charge that raw shell eggs and other raw food items must be stored according to the final cooking temperature and must always be stored below RTE foods. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Observed a meat slicer stored as clean with food debris on the meat slicer. Discussed with person in charge to ensure that meat slicers are thoroughly broken down and cleaned after use. Person in charge had the meat slicer broken down to be washed rinsed and sanitized again. Please ensure that meat slicers are washed, rinsed and sanitized every 4 hours while in-use. Inspector's notes

Observed sliced ham, cooked pork and cooked breaded shrimp with internal temperatures as measured using a probe thermometer of 51° F inside of the walk-in cooler. Per the person in charge, they were working with some of the foods, but it was unclear how long they had been out of refrigeration. Person in charge chose to embargo the foods. Discussed with person in charge minimizing the amount of food that is brought out of refrigeration to work with. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
