Three compartment sink will be utilized for sanitizing dishes until machine is in good repair and able to dispense proper quat sanitizer levels. Discussed using test strips daily to ensure dish machine is in good repair. Inspector's notes

Observed approximately 6 flat sheet pans with roasted tomatoes on them that had been cooked and were cooling at room temperature according to the person in charge. The internal temperature of the roasted tomatoes as measured using a probe thermometer ranged from 72°-77°F. According to the time stamp on the tomatoes, they had been cooked and began cooling approximately 40 minutes prior to the temperature assessment. Person in charge placed the sheets of roasted tomatoes inside of the walk-in cooler so they could complete the cooling process. Discussed with person in charge that the cooling phase begins once the foods reach 135°F. Time and temperature controlled for safety foods must be cooled from 135°F to 70°F within the first 2 hours, and then from 70°F to 41°F within the next 4 hours for a total cooling period not to exceed 6 hours. Discussed with person in charge to consider the use of a cooling log to better track cooling TCS foods. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Observed multiple plastic containers of roasted onions, roasted mushrooms, and roasted sweet potatoes inside the walk-in that were in the process of cooling. The containers were covered and were approximately 5-6 inches deep. Internal temperature was measured using probe thermometer and temperatures ranged from 81°F-89°F. Time sticker indicated they were placed approximately 1.5 hours prior to inspection (9:00 AM). At the time of inspection, the PIC placed onions, sweet potatoes, and mushrooms in ice bath to rapidly cool to 70°F. Reviewed proper cooling methods with the PIC. Instructed PIC to acquire the appropriate test strips for their 3-compartment sink. Discussed with management obtaining quat test strips prior to reinspection.
