The person in charge separated the nested pans so that they could fully air-dry. Discussed with person in charge to fully air-dry the dishes prior to stacking them together. Discussed with person in charge that if scoop is stored in the ice, the handle must be stored upright so that it is not sitting in the ice directly. Person in charge stored the scoop handle-up. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. Observed chlorine ppm levels that were testing below 50 ppm as indicated by the test strips. Chlorine was available however it was not feeding into the machine properly. At the time of inspection PIC set up quat sanitizer in the 3-comp sink which was tested using test strips and tested between 150-400 ppm for the sanitizer. Discussed sanitizing dishes in the 3-compartment sink until the dishwasher can be serviced by a technician. Correct By: Corrected At Time Of Inspection
