Observed a broken and pealing seal on the fried chicken hot holding unit. Alerted the manager who stated they would put in a work order to have the seal repaired. Discussed concerns around physical contamination. No contamination was observed while EHS was onsite. Discussed the importance of keeping equipment in good working order. Corrective Action: Correct prior to next routine inspection.

Observed whole rotisserie chickens sitting out (128-134°F) at room temperature on a prep table. An employee was shredding the chicken to be cooled in the walk in. The employee quickly finished shedding the chicken and placed it in the walk in, at time of inspection. The chicken had been sitting out for less than 1 hour. Foods should not dip below 135°F without active cooling taking place. Discussed shredding the chicken sooner, at a hotter temperature, as to not have chicken enter into the temperature danger zone 135-41°F without active cooling. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff, which resulted in the violation. Discussed cooling methods with staff.
