Observed internal temperature of potatoes and cooked beans inside walk-in cooler at 45°F, per probe thermometer. Ambient temperature of walk-in cooler observed at 45°F, per min/max thermometer. Person in Charge (PIC) stated that the potatoes and cooked beans were re-placed into walk-in cooler 2 hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Observed potatoes and cooked beans rapidly cooling to 41°F after PIC turned down temperature dial of walk-in cooler. Corrective Action: Corrected at time of inspection.

At time of inspection, 1/4lb of sliced tomatoes and 1lb of lettuce observed with a date mark of 10/30. PIC discarded sliced tomatoes and lettuce. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. PIC placed correct date marking stickers on battered fish and pork. Corrective Action: Corrected at time of inspection.

Observed cooked cabeza meat (head meat) measuring at an internal temperature of 58°F in the walk-in fridge. Discussed with PIC about the cooked meat and when it was prepared and PIC said it was prepared last afternoon. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. PRIORITY VIOLATION-3-501.14 - Priority: Cooling.
