Observed multiple containers of blanched fries sitting out at room temperature registering with an internal temperature of 67°F and multiple containers of blanched fries in the walk in cooler registering a temperature between 43°-47°F. Per manager, the fries out at room temperature had been sitting for 4 hours and the fries in the walk in cooler had been cooling since yesterday. Cooked fries shall be cooled from 135° to 70° within 2 hours and from 70° to 41° within an additional 4 hours. Manager reheated fries that were under 70°sitting out at room temperature to 165° and re-cooled. The manager voluntarily disposed of the fries in the walk in cooler.
