Advisory - Onsite visit with store manager Andres and PR manager RS 860. Store has a storage warehouse located in an adjacent building to the main store. The storage area is used for bulk overflow storage of prepackaged non TCS beverages and minimal equipment. Noted at time of inspection loose insulation falling from parts of ceiling, - remove loose insulation, concrete transition at delivery dock door damaged and will need to repaired to provide a smooth flush barrier to keep pests out. 2 holes in drywall will need to be patched, 2 hanging light ballasts were in disrepair - repair or replace. No water plumbed to the suite.

Observed 110°F internal temperature of bacon, cubed pork, and chicharrónes inside steam well, per probe thermometer. Water inside steam well observed at range of 133°F - 135°F, per probe thermometer. Per Person in Charge (PIC), steam well had not been working properly and has submitted a work ticket to fix the hot holding equipment. Except during preparation, cooking, or cooling all TCS foods must be maintained at 135°F or above. All listed TCS foods items were reheated to 165°F at time of inspection. Repeat Violation PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding: Chiles, chicken, pork and pork bits stored in steam table were probed with an internal temperature ranging between 90 to 130 Deg. F. TCS foods had been out of temperature for approximately 2 hours and were properly reheated to 165 Deg. F for 15 seconds. It was determined that the steam table had not been turned on properly at start of day causing the foods to slowly drop below hot holding temperature over time. The well was turned on and working by end of inspection. The steam wells were also not full causing a lack of contact with the water and the food pans. The Chile steam well was found to not be holding properly and will be placed on time control until well is repaired. Ensure hot held food is held at or above 135 Deg. F. In addition, several items (whole chicken, chicken thighs, and cooked jalapenos) were observed in a hot holding unit nearest to the tortilleria registering internal temperatures between 106°F and 112°F. Cooked meat products shall be held at a temperature of 135° or more. Per manager, carnitas, chicken, and jalapenos were placed in hot holding one hour prior.
