Observed no hot water at any sinks in establishment. Observed no hot water heater installed at establishment. Per person in charge (PIC), hot water heater was removed one month prior to inspection to be replaced. Permit only used to bake cookies, operate soda fountain, and use tongs for open beef jerky pieces. Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. Per Owner, establishment to not bake cookies until water heater is replaced. Establishment to heat up water sufficient to wash/rinse/sanitize soda nozzles and tongs. Establishment to provide adequate hot water at all sink fixtures prior to re-inspection on 5/12/26. Corrective Action: Correct prior to re-inspection.

Observed expired QT-40 test strips from 2014 and 2021. Observed no accurate test strips present at establishment during time of inspection. Test strips are required for any sanitizers used with food contact surfaces. A test kit or other device that accurately measures the concentration in MG/L (ppm) of sanitizing solutions shall be provided. Accurate test kit/ device shall be available.
