Observed sheet trays of racks of ribs cooling in the walk in. Ribs were between 72-81*F. Per cooling logs, the ribs finished cooking at 3.5 hours prior and were at 205*F. No other temperatures were taken. Ribs were placed in the walk in to cool approximately 3 hours prior. Ribs were not below 70*F within 2 hours and were embargoed. Reviewed cooling methods with manager and chef. Instructed establishment to monitor the temperature of cooling foods throughout the cooling period to ensure they get below 70*F within 2 hours and below 41*F within 6 total hours.

Observed three sanitizer buckets located throughout kitchen and bar test between 50ppm to 100ppm for Quaternary Ammonia sanitizer. Per person-in-charge (PIC), sanitizer buckets were changed 30 minutes prior, but sanitizer pump was running low on sanitizer. PIC replaced sanitizer connected to pump and replaced the sanitizer in sanitizer buckets with the appropriate amount of Quaternary Ammonia testing at 200ppm. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-5-202.13, P: Backflow Prevention, Air Gap ---Observed long flexible hose with hand nozzle at the end, at the dish pit, currently long enough to be able to be below the flood rim level. Manager said the hose was added to have enough pressure at the dish pit. Hose was removed during inspection. Talked to manager about plumbing requirement.
