Inspector's notes

In the prep cooler by the waffle station, observed raw chicken, buttermilk for onions, pre cooked sweet potato fries, and pre cooked fries holding between 46*F and 52*F. Fries, sweet potato fries, and onions were placed in unit within the last 4 hours and were moved to the walk in cooler. Chicken was placed in the unit over 5 hours ago and was embargoed. Unit was holding at 47.3*F (after 12 minutes) on inspector's min/max thermometer. Unit must be holding below 41*F to ensure foods remain at proper temperatures. Establishment can operate without the use of this cooler. Until repaired, please keep TCS foods in other units.
