All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC instructed employees to sanitize metal countertop during inspection to correct. Inspector's notes

Observed portioned shredded cheese, diced tomatoes, packaged cut romaine lettuce, and portioned cut melon (honeydew, watermelon) with internal temperatures between 50-52'F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Items were located in prep-style refrigerator with ambient air temperature measured at 49'F. Per PIC, items were placed in unit less than 4 hours prior to inspection. PIC returned items to walk-in refrigerator to cool rapidly. Inspector verified during inspection that internal temperatures were dropping. This unit is not critical refrigeration for cold-holding of TCS foods. PIC contacted refrigeration technician during inspection. Corrective Action: Corrected at time of inspection.
