Observed several dishes stored at the clean dishes rack that upon separation were observed to have water still trapped inside the nested pans. The person in charge separated the pans so they could finish air-drying. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Observed a fair amount of food debris throughout the kitchen area and also observed a large accumulation of chili and other residues on the outside of the ice chest. Discussed with person in charge to clean the kitchen area and the ice chest on a more frequent basis to prevent the accumulation of food debris and scraps in the kitchen and on ice chests, prep units, etc. Also discussed cleaning the floor drain at the front handwashing sink. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Inspector's notes

Observed some containers of pineapple aguas frescas and tamarind aguas frescas that were cold holding in a prep unit according to the person in charge. The internal temperature of the aguas frescas as measured using a probe thermometer ranged from 48°F - 49°F. According to the person in charge, it was unclear how long the aguas frescas had been out of temperature and they were discarded at time of inspection (see embargo form). Discussed with person in charge to keep lid closed on prep unit. It was observed that the lid was open at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
