PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Inspector's notes

Observed some pre-cooked meatballs in hot well on line at 125*F-134*F and some above 135*F. Per person-in-charge (PIC), meatballs are reheated to 145*F-155*F and then placed in well. Per PIC, meatballs had been in hot well for approximately 1.5 hours. Unit observed to have been properly functioning with other sauces in well at 155*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals>>>Observed employee sanitizing components of slicer during breakdown cleaning; the sanitizing solution had a concentration of 500 ppm of quaternary ammonia; the chemical dispenser was dispensing the sanitizing solution at 500 ppm quaternary ammonia. Person in charge informed that quaternary ammonia sanitizing solution for food contact surfaces and equipment must have a concentration of 150 ppm - 400 ppm. Person in charge put in a ticket for the dispenser to be adjusted and instructed employee to re-wash, rinse, and sanitize components with newly prepared/diluted sanitizing solution with a measured concentration of 400 ppm. Person in charge also instructed the employee to replace any sanitizer buckets in the kitchen with the new lower concentration solution. Large concentrations of sanitizer in excess of the CFR requirements can be harmful because residues of the sanitizer remain on food contact surfaces and equipment; establishment must test sanitizer to ensure it is in the appropriate ranges set by CFR (150 - 400 ppm for quaternary ammonia) or by manufacturer specifications for food contact surfaces.
