Observed an accumulation of plastic wrapping and black dot clusters on the walls of the walk-in refrigerator that houses the dairy. Informed PIC that this area needs to be cleaned and continue to be cleaned at a rate which precludes the accumulation of dirt, debris, and organic matter. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection.

This establishment is not participating in the award program at this time and had no Priority, no Priority Foundation violations on this inspection.Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Please submit an application, supporting documentation, and fees within 5 business days. Operator has removed the 3 comp sink and back handwashing sink and moved the ice machine to near the mop sink on the other side of the beer walk-in without Department approval. Operator has continued to bag ice in-house for retail sale. Requested ice bagging and coffee urn service be stopped because there is no dishwashing equipment to wash and sanitize the ice scoop or the coffee urns.Due to the violations noted on this inspection report, County legal action may result from this inspection.Emailed report to Sandhu.
