Repeat Violation 5-103.11 - Priority Foundation: Capacity-Quantity and Availability Predefined Comment: Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. Provide adequate hot water at all sink fixtures prior to re-inspection. Discussed installing point of use instant heaters for the two bakery hand washing sinks. Hot water was available at other hand washing sinks throughout the establishment.

PRIORITY VIOLATION-7-202.12, P: Conditions of Use Observed concentration of quat sanitizer in three compartment sink above 400 ppm. Discussed with PIC that pump of dispenser needs to be adjusted to dispense proper concentration or that solution will need to be diluted after every use. Quat sanitizer for use in food contact surfaces must be maintained between 150-400 ppm. Concentrations over 400 ppm could be toxic if consumed. Sanitizer was diluted to 200 ppm.
