No County legal action will result from this inspection. Report emailed. A work order was opened for the cold-holding display case in the deli. The unit will not be used until the unit is repaired. Deli is using the walk-in cooler.
Inspector's notes
Observed the cold-holding display unit in the deli not holding temperature of 41*F or lower. The temperature using min/max thermometer in the middle of the unit was 44.5*F. The min/max temperatures on the ends of the unit were 41.0*F. The internal temperatures of the foods (sliced deli meats, egg rolls, pasta salads, potato salads, etc.) that were voluntarily discarded varied between 44*F-54*F using probe thermometer and verified with establishment's probe thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Please see embargo form. All foods with an internal temperature of 41*F or lower, and foods that were recently placed in the unit were moved to the walk-in cooler at time of inspection. Corrective Action: Corrected at time of inspection.
