-- In beer cooler, observed carton of shelled eggs being stored on top shelf above multiple alcoholic beverage cases. No visible contamination observed. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Provided additional recommendations to reduce the attraction of pests: - Limit standing water - Inspect shipments of food - Sealing food in containers - Repair plumbing leaks - Eliminating cardboard clutter/ remove food from original cardboard packaging - Sealing open spaces in floors, walls, and ceiling - Maintain a clean and sanitary facility Corrective Action: Correct prior to next routine inspection.

Pico de gallo with internal temperature of 51*F in walk-in cooler. The were about 4 pans of pico that were cooling since 12;00 PM and each was covered with plastic wrap not allowing airflow into the container. PIC adjusted the edge of the plastic wrap to allow airflow into container. Please employ best cooling practices when cooling TCS food items to minimize time in the "temperature danger zone" Corrective Action: Corrected at time of inspection.

Observed the following TCS food products in the cooling process: Fully cooked chicken wings, Diced tomatoes, and cooked wild rice being stored while lidded. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered to allow for rapid cooling. Corrective Action: Corrected at time of inspection.
