Observed prepped chicken tenders on rack at door of walk in cooler at 45*F, as per the person in charge the door had been held open for delivery of produce and staff did not shut door completely. Chicken was moved to colder location in walk in cooler. Advised staff to place produce n rack by door and keep temperature control for safety foods in colder areas of walk in cooler. Close door tightly after leaving walk in cooler. Observed red salsa in walk in cooler at 45*F, Container showed a made on date of 6/9/2026. Product was embargoed and discarded. Observed container of carne asada in upright refrigerator in back kitchen at 50*F. As per the person in charge the carne asada was prepared the day before and placed in two door refrigerator to cool overnight. Product was embargoed and discarded. Advised staff to verify cold hold temperatures through out the day using their metal stem themometer. Corrective Action: Corrected at time of inspection. Second Consecutive Violation

As per the person in charge the food was prepared this morning and was covered to soon due to health inpection. Staff normally cool uncovered. Observed container of al pastor in refrigerator across from grill at 51*F. As per the person in charge the al pastor was heated at grill, cooled and placed in container in the refrigerator earlier in the morning. Al pastor was placed onto two containers to rapidly cool Advised staff to cool in shallow uncovered containers. Corrective Action: Corrected at time of inspection.

As per the person in charge, the refrigerator was restocked approximately one hour before the inspection started. Advised staff to monitor cold holding using their metal stem thermometer. Corrective Action: Corrected at time of inspection.

Observed small sandwich prep cooler observed to be holding at 60*F. Upon further investigation ice was observed forming along the back wall. Unit was unplugged and food removed to other locations or placed on ice during meal rushes rushes. Unit will be plugged in after defrosting and if food can be help at 41*F used. If not a repair company will be contacted to repair. Reinspection to be completed on or before February 27, 2026. Corrective Action: Correct prior to re-inspection.
