Observed milk batter and raw chicken in cold holding unit with an internal temperature ranging 46-51*F. Cook stated foods were placed in unit within 2 hours and placed on ice for quick cooling to 41*F within 20min. Strawberry cheesecake in small reach in unit at registers with an internal temperature of 48*F. Person in charge could not determine time entered into unit and voluntarily discarded. PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Observed chicken batter cold holding unit and small dessert reach in at tea dispenser unable to maintain an internal temperature of temperature-controlled foods at 41*F or below. Ambient air temperature of units ranging 47-51*F with excessive ice buildup on chicken batter unit. All foods to be held in neighboring units at 41*F until replaced or fixed and can hold at a cold holding temperature of 41*F or below. 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Predefined Comment: All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection.
