Observed Italian Wedding Soup, Minestrone Soup and Penne pasta salad in prep cooler by freezer at 45-46*F. Internal temperature of refrigerator at 39*F. Cold hold of food to be at 41*F or lower. Product was cooled back to 41*F in freezer. Advised staff to check food temperatures after meal rushes with metal stem thermometer to verify cold hold temperatures of food. Corrective Action: Corrected at time of inspection.
