Observed sliced tomatoes at buffet table at 50*F. As per the person in charge the tomatoes were cut prior to opening. Buffet table is not equipment that can cool food down. Tomatoes must be cooled prior to placing on buffet table. Tomatoes were placed in walk in cooler to cool back to 41*F. Observed Garlic and oil at stove top at 72*F. Garlic and oil must be stored at 41*F. Item was embargoed and discarded. Broth in walk in cooler was observed to be at 47*F. As per the person in charge the broth was prepared overnight and cooled with ice bath prior to be placed in walk in cooler. Corrective Action: Corrected at time of inspection. 2nd Consecutive Violation.
