Back handwash sink located next to the 3-Comp sink lacked paper towels. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC provided hand drying provision for handwash sink at time of inspection.

Observed 46°F-51°F internal temperature range, per probe thermometer, of raw bacon, shredded cheese, ice cream mix, beef top sirloin, mozzarella cheese, milk, sausage, and yogurt inside will-call cooler in back of establishment. Per person in charge (PIC), listed TCS foods (see embargo list) were placed into will-call cooler from a truck shipment between 6am-7am morning of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods shall be maintained at 41°F or below. All TCS foods (see embargo list) improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
